Easy Weeknight Hamburger Bowls with Burger Sauce

This hamburger bowls recipe is for nights when a cheeseburger sounds perfect…but turning on the grill, not so much. You get all those delicious and familiar flavors of a juicy burger, melty cheese, crisp lettuce, pickles, fries, and a want-to-put-it-on-everything creamy burger sauce layered into one easy bowl that's both fun and responsible.

This salad-adjacent dinner is fast (on the table in about 30 minutes), it's flexible, and it checks the "everyone will actually eat this" box. Trust me: this is one weeknight recipe that'll earn a permanent spot in your rotation.

What makes these bowls a weeknight win is how customizable they are. Everyone builds their own with their favorite toppings (no dinner-table negotiations required), and that homemade burger sauce deserves its own fan club. It's got just the right balance of creamy, tangy, and smoky and yes, it gives that iconic fast-food sauce a very real run for its money.

Have I mentioned everything comes together in about 30 minutes? Yes? Well it deserves another shoutout because those quick and easy, fuss-free recipes are my absolute favorite. Whether you're feeding kids, adults, or a mix of both, these hamburger bowls disappear fast.

Ingredients

Before we get started, let's gather the ingredients we need for this burger bowl recipe:

  • ground round (85/15)
  • Worcestershire sauce
  • garlic powder
  • kosher salt and freshly ground black pepper
  • grape tomatoes or cherry tomatoes
  • sharp Cheddar cheese
  • shredded lettuce
  • dill pickle slices
  • frozen waffle fries
  • mayonnaise
  • hickory bbq sauce
  • ketchup
  • yellow mustard
  • paprika

Instructions

Now that we've got our ingredients, it's time to get cooking!

  1. First, cook the fries in a single layer on a rimmed baking sheet according to the package directions.

  1. Meahwhile, make the sauce: Mix together the mayonnaise, bbq sauce, ketchup, mustard, and paprika in a medium bowl. Set aside.

  1. Next, heat a large skillet over medium-high heat. Add the ground beef. Season with the salt, pepper, garlic powder, and Worcestershire. Cook as you would a smashburger, until the beef is browned, breaking up the meat into large chunks.

  1. Finally, divide the French fries evenly between 4 bowls. Top with shredded lettuce, the ground beef mixture, tomatoes, pickles, and cheese. Drizzle with the sauce and then serve.

Hint: For the best results, leave the ground beef undisturbed to allow it to caramelize and brown deeply. Those browned bits=lots more flavor.

Substitutions

Check out these substitution ideas in case you need to make some adjustments:

  • Ground beef - For this recipe, I opt for lean ground round (85/15). Swap with ground turkey, ground chicken, or plant-based crumbles if you'd like.
  • Waffle fries - Honestly, any kind of French fries will work for this recipe. Use shoestring fries, tater tots, roasted potatoes, or sweet potato fries.
  • Cheddar cheese - Instead of sharp Cheddar cheese, go for a mild or extra-sharp Cheddar, or try Colby Jack, American cheese, pepper jack, or shredded mozzarella.
  • Lettuce - I like shredded romaine lettuce for this recipe, but you can use iceberg, green leaf, butter lettuce, or even mixed greens.
  • Pickles - Personally, I'm a fan of tangy dill pickles but bread-and-butter pickles or chopped pickled jalapeños work here too. For a chunkier pickle experience, coarsely chop pickle spears instead of slices.

Variations

Want to change things up? Here are some ideas:

  • Spicy Burger Bowls - If you like things on the spicier side, add a little cayenne pepper to the burger sauce. You can also add some crushed red pepper flakes to the hamburger meat as it cooks for even more spice.
  • Bacon Cheeseburger Bowls - Everything's better with bacon, right? Add crispy bacon as an extra topping. I'm sure no one will complain.
  • Southwest Burger Bowls - Swap the fries for roasted potatoes or sweet potatoes, add black beans, avocado, and jalapeños, and finish with shredded pepper jack cheese and refrigerator pickled red onions on top.
  • Fancy Burger Bowls - There are so many ways you can make this deconstructed burger bowl a little on the fancy side: add caramelized onions, feta cheese or blue cheese, baby spinach, and sautéed mushrooms. Heck, I wouldn't be mad if you added a fried egg on top too like I do for loco moco.

Here's the equipment you'll need to make this recipe:

Storage

To refrigerate: Store the cooked ground beef, fries, sauce, and toppings in separate containers in the refrigerator for up to 3 days.

To freeze: The cooked beef will freeze well; the other ingredients will not. Transfer the beef to an airtight container and freeze for up to 2 months.

Tasty Tip

Build the bowls just before serving. That way the meat and fries can stay hot and they won't shrivel the lettuce.

Frequently asked questions

Can I make the burger sauce ahead of time? What else is it good on?

Absolutely! It keeps well in the fridge for up to 5 days. And what else is it good on? A spoon...seriously though. After one bite it's going to become your go-to sauce. I love it with chicken tenders and chicken wings. I also love it as a sauce for tostones too. (They're like giant French fries.)

What's the best lettuce for burger bowls?

I love a good texture contrast, so I recommend a crunchy lettuce like romaine or iceberg. Butter lettuce would also work, but it'll have a softer bite.

Can I use another kind of ground beef instead of ground round?

Absolutely. If you use ground chuck (80/20) or a fattier cut, you will want to drain off the excess grease after browning. Extra lean ground beef like ground sirloin may need a touch of avocado oil or vegetable oil in the pan for browning so the ground meat doesn't stick.

Can you recommend a low-carb option?

Easy--just omit the French fries and check the labels of the bbq sauce and ketchup you use for the sauce. Go for sauces that are lower in sugar.

What can I serve with this burger in a bowl recipe?

The great thing about this recipe is that it can stand on its own. If you're looking for an additional side, a simple fruit salad or corn on the cob is great.

My ground beef isn't browning at all--it's almost watery. Is that normal?

Sounds like your pan wasn't hot enough. Let the meat hang out in the pan without touching it. Then treat it like a smash burger, pressing on the meat as it cooks to allow caramelization. Some watering out is normal. Just let that liquid evaporate and you'll be back in business.

Ingredients

For the burger bowls:

  • 1 (20-ounce) package frozen waffle cut fries (I like Alexia seasoned waffle fries)
  • 1½ pound ground round
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pint grape tomatoes, halved
  • ½ (8-ounce) block sharp Cheddar cheese, shredded
  • 4 cups shredded lettuce
  • 1 cup coarsely chopped dill pickle slices

For the burger sauce:

  • ½ cup mayonnaise (I like Duke's mayonnaise)
  • 2 tablespoon hickory barbecue sauce
  • 2 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • ½ teaspoon paprika

Instructions

  • Preheat the oven to 425°F. Arrange the fries in a single layer on a rimmed baking sheet coated with cooking spray. Bake according to the package directions.
  • Meanwhile, mix together the mayonnaise, bbq sauce, ketchup, mustard, and paprika in a medium bowl until smooth. Set aside.
  • Heat a large skillet over medium-high heat until hot. Add the ground beef. Season with the Worcestershire sauce, garlic powder, salt, and pepper. Cook until the beef is browned and no longer pink, breaking up the meat into large chunks as it cooks.
  • Divide the French fries between 4 serving bowls. Add lettuce, the ground beef, pickles, tomatoes, and cheese. Drizzle with the sauce before serving.

Recipe guidelines and test kitchen tips

When developing and testing recipes, here are some key things that I do for more success in the kitchen:

  • Be sure to use dry measuring cups for things like flour, sugar, and mayonnaise and a liquid measuring cup for things like water, milk, and broth.
  • When measuring dry ingredients like flour and powdered sugar that can pack down, spoon the ingredient into a dry measuring cup and level with a knife as opposed to scooping the measuring cup into the ingredient.
  • I test and develop recipes using a standard electric oven and standard gas stovetop. Be aware that if you use an electric stovetop or convection oven, your bake times will be different.
  • When recipes call for kosher salt, I use Diamond Crystal kosher salt.

Finally, don't forget to keep these food safety tips in mind when making this recipe.

  • Be sure to cook the ground beef to an internal temperature of 160°F when tested with a meat thermometer.
  • Don't leave food sitting out at room temperature for extended periods.
  • Never leave cooking food unattended.
  • Always have good ventilation when using a gas stove.
