Inspired by my trip to Greece, this watermelon salad with feta and mint tastes like summer in a bowl. This refreshing Mediterranean summer salad comes together quickly and makes the perfect easy side dish for cookouts, hot summer nights, and entertaining.

Ingredients

  • 3 cups cubed watermelon
  • 1 (7-ounce) container feta cheese, cubed
  • ¼ cup fresh mint leaves, plus more for garnish
  • tablespoons white balsamic vinegar
  • 1 tablespoon honey
  • Extra virgin olive oil
  • Freshly ground pepper to taste

Instructions

  • Combine the watermelon, feta, and mint in a serving bowl.
  • Whisk together the vinegar and honey in a small bowl. Drizzle over the watermelon along with the olive oil. Garnish with more mint and sprinkle with pepper before serving.
