Tomato, Basil, and Feta Pasta Salad (Zoe's Copycat Recipe)

Do you miss Zoes kitchen pasta salad recipe as much as I do? Well I have some good news! I've created a copycat version of the delicious pasta salad, and it's super easy to make. It's the perfect fresh side to celebrate ripe summer tomatoes too.

Equipment

  • pasta pot
  • colander
  • chef's knife
  • dry measuring cup
  • measuring spoon
  • large bowl
  • whisk

Ingredients

  • 8 ounces uncooked shell pasta
  • 1 (8-ounce) block feta cheese, cut into small pieces
  • 12 ounces Campari tomatoes
  • ½ cup coarsely chopped fresh basil, plus more to garnish
  • 3 tablespoon olive oil or extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper

Instructions

  • Cook the pasta in boiling salted water to al dente according to the package directions. Drain and rinse under cold water. Set aside.
  • Whisk together the oil, vinegar, salt, and pepper in a large bowl.
  • Dice the tomatoes and add (with the juices) to the dressing in the bowl.
  • Add the pasta, feta, and basil and toss to coat. Season with additional salt and pepper to taste and garnish with fresh basil. Serve immediately or cover and refrigerate until ready to serve.
