Prickly Pear Cactus Moscow Mule

This easy prickly pear vodka cocktail is not only pretty, it's delicious too! A homemade prickly pear simple syrup gives the drink it's gorgeous hot pink hue and is the perfect pair to ginger beer, lime, and vodka.

Ingredients

  • 1 pound prickly pears, peeled and cut into large chunks
  • 1 ½ cups water
  • 1 cup granulated sugar
  • 3 tablespoon lime juice
  • ½ cup vodka
  • 1 (12-ounce) bottle ginger beer
  • Lime slices and edible flowers for garnish (optional)

Instructions

  • Make the prickly pear syrup: Combine the peeled prickly pears and water in a medium saucepan. Bring to a boil over medium-high heat. Reduce the heat to low and simmer for 15 minutes or until the fruit is very soft.
  • Mash the fruit with a potato masher. Strain the mixture through a fine wire mesh strainer into a measuring cup. Rinse out the saucepan.
  • Combine the prickly pear liquid, sugar, and lime juice in the saucepan. Place over low heat and cook until the sugar dissolves. Set aside to cool completely.
  • Make the cocktails: Pour 1 to 2 tablespoons of the prickly pear syrup into each of 2 ice-filled glasses. Divide the vodka evenly between the glasses and top each with ginger beer. Garnish each drink with a lime wheel and edible flowers, if desired.
