1poundprickly pears, peeled and cut into large chunks
1 ½cupswater
1cupgranulated sugar
3tablespoonlime juice
½cupvodka
1(12-ounce) bottleginger beer
Lime slices and edible flowers for garnish (optional)
Instructions
Make the prickly pear syrup: Combine the peeled prickly pears and water in a medium saucepan. Bring to a boil over medium-high heat. Reduce the heat to low and simmer for 15 minutes or until the fruit is very soft.
Mash the fruit with a potato masher. Strain the mixture through a fine wire mesh strainer into a measuring cup. Rinse out the saucepan.
Combine the prickly pear liquid, sugar, and lime juice in the saucepan. Place over low heat and cook until the sugar dissolves. Set aside to cool completely.
Make the cocktails: Pour 1 to 2 tablespoons of the prickly pear syrup into each of 2 ice-filled glasses. Divide the vodka evenly between the glasses and top each with ginger beer. Garnish each drink with a lime wheel and edible flowers, if desired.
