Ingredients

  • ½ cup canned coconut milk (full-fat)
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 4 cups frozen pineapple chunks
  • ½ cup pineapple juice
  • Pineapple wedges for garnish (optional)

Instructions

  • Add the coconut milk, honey, and vanilla to a high-speed blender.
  • Top with the frozen pineapple chunks and pineapple juice.
  • Puree until the mixture is smooth, stopping to scrape down the sides of the blender with a rubber spatula as needed.
  • Immediately spoon into serving glasses or transfer to a pastry bag or zip-top plastic freezer bag fitted with a fluted tip and pipe into serving glasses. Garnish with pineapple wedges, if desired. Serve immediately.
