Easy Greek Tzatziki Sauce with Cucumber and Yogurt

This easy tzatziki sauce is one of those recipes I never grow tired of and one where I'm always looking for something to dip into it, from pita wedges to fresh veggies and grilled chicken. When we were in Greece last summer, we practically had it at every meal. Much like a lot of Greek dishes, this sauce is proof that a few good-quality ingredients can turn into something incredibly delicious.

Ingredients

  • ½ English cucumber
  • 1 teaspoon kosher salt
  • 1 cup whole milk Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, grated
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon extra virgin olive oil
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • Grate the cucumber using a box grater and spread in a single layer on a paper towel-lined baking sheet.
  • Sprinkle the cucumber with 1 teaspoon salt and let stand for 30 minutes to allow the liquid to release.
  • Gather the grated cucumber in the paper towels and squeeze thoroughly to remove the liquid. Transfer the cucumber to a medium bowl.
  • Stir in the yogurt, lemon juice, garlic, dill, parsley, and olive oil. Season to taste with salt and pepper. Cover and refrigerate until ready to serve.
