Hot Knorr spinach artichoke dip with bacon in a blue handled cast iron skillet.

Cheesy Knorr Spinach and Artichoke Dip with Bacon

This cheesy Knorr spinach and artichoke dip with bacon is the hot, bubbly appetizer that always gets scraped clean. A packet of Knorr vegetable mix seasons a creamy blend of spinach, artichokes, and three cheeses, then crispy bacon goes on top for the perfect salty crunch. Make it ahead and bake it right before the party starts.

Equipment

  • large skillet
  • chef's knife
  • colander
  • dry measuring cups
  • metal tongs
  • box cheese grater
  • electric hand mixer
  • 2-quart baking dish or skillet

Ingredients

  • 4 slices thick-cut bacon, chopped
  • 2 clove garlic, minced
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (8-ounce) block cream cheese, softened
  • ½ cup mayonnaise
  • 1 (1.4-ounce) packet Knorr vegetable recipe mix
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
  • Pita chips for serving

Instructions

  • Preheat the oven to 350°F.
  • Cook the bacon in a large skillet over medium-high heat until crisp. Remove from the skillet to a paper towel-lined plate with a slotted spoon, reserving 2 tablespoons of the drippings in the skillet.
  • Add the garlic and spinach to the drippings and cook until the garlic is tender and the spinach is warmed through.
  • Beat the cream cheese in a medium bowl with an electric hand mixer until creamy. Beat in the mayonnaise and vegetable dip mix.
  • Mix together the cheeses. Fold half of the cheese mixture, the spinach mixture, and the artichoke hearts into the cream cheese mixture, stirring until smooth.
  • Transfer into a 2-quart baking dish or oven-proof skillet and sprinkle the top with the remaining cheese.
  • Bake for 30 minutes or until the top is browned and bubbly. (I usually broil for about 2 to 3 minutes to ensure even browning.) Remove from the oven and sprinkle with the bacon. Serve warm with pita chips.
